One of the biggest misconceptions about eating healthy is that it has to be complicated. In reality, it’s often the opposite. Having a few simple staples prepped ahead of time makes it much easier to hit your protein goals, eat more fruits and vegetables, and avoid reaching for less satisfying snacks.
These four recipes have become regulars in my kitchen because they work together. The fresh juice is a great way to use up produce, the homemade nut milk is creamy and delicious, the leftover nut pulp gets transformed into protein cookies (so nothing goes to waste!), and the sorbet is my favorite refreshing treat when I want something sweet.
These recipes are actually made with my Canoly 3 in 1 juicer. I love that it can make fresh juice, creamy nut milk, and frozen sorbets. If you’ve been thinking about getting one, you can save $20 with my link here: https://www.canoly.com/?ref=AMYSCHENKER
Green Juice
If you’re trying to eat more fruits and vegetables but struggle to fit them in, fresh juice can be an easy addition to your routine. While juicing removes much of the fiber, it’s still a simple way to enjoy a variety of vitamins and minerals. Want a use for the fiber? Freeze and add to smoothies.
Ingredients
1 green apple
1–2 kiwis
½ cucumber
1–2 cups spinach
1 lime
Directions
Run everything through a juicer and enjoy immediately over ice.
Pink Sorbet
This sorbet tastes like dessert but is packed with fruit. The frozen fruit creates an incredibly creamy texture, while the banana adds just enough sweetness.
Ingredients
½ cup frozen dragon fruit
½ cup frozen cherries
½ cup frozen mixed berries
½ frozen banana
Directions
Run through your Canoly machine and enjoy.
Homemade Nut Milk
Once you make homemade nut milk, it’s hard to go back. It’s creamy, customizable, and perfect for smoothies, oatmeal, coffee, or drinking on its own. You can flavor it with cocoa powder for a chocolate version or add protein powder for an extra protein boost.
Ingredients
1 cup hazelnuts, soaked 4–12 hours
½ cup cashews, soaked 4–12 hours
2–3 cups water
1 teaspoon vanilla extract
Cocoa powder or your favorite protein powder, to taste (optional)
Directions
Drain and rinse the soaked nuts. Run through your Canoly and mix with powder if desired
Don’t throw away the pulp, you’ll use it for the cookies below!
Protein Pulp Cookies
One of my favorite parts of making homemade nut milk is that nothing goes to waste. Instead of tossing the leftover nut pulp, turn it into soft, hearty protein cookies.
Ingredients
Leftover nut pulp from the milk
2 mashed bananas
2 tablespoons maple syrup or honey
4 eggs or ¾ cup (200 g) egg whites
About 1 cup protein powder (100 g, depending on the brand)
About ⅓ cup rolled oats, or oat flour (36 g)
Directions
Preheat your oven to 350°F
Mix all ingredients together until well combined.
Scoop onto a parchment lined baking sheet.
Bake for 20–30 minutes, or until the cookies are set and lightly golden.
Makes 20–24 cookies.
These recipes are proof that healthy eating doesn’t have to mean spending hours in the kitchen. One batch of nut milk gives you milk for the week and the ingredients for protein cookies. Pair those with a batch of sorbet and a fresh green juice, and you’ve already got several nutritious options ready to go.
If you make any of these recipes, I’d love to hear which one becomes your favorite!
